Loaded Pulled Pork Nachos are a great way to use up leftover pulled pork especially as an appetizer for a party or a filling main meal for the family. Quick to put together, and done in 30 minutes this is a huge crowd pleaser!
Where do nachos come from?
Nachos first appeared on the scene in 1943 at a restaurant in Piedras Negras which is a small town in Mexico near a US military base in Ft. Duncan, Texas. Ignacia Anaya the chef of the Victory Club took pity on a group of military wives that rolled in at closing after a long day of shopping in Eagle Pass.
Ignacio felt sorry for them so he sliced up some tortilla chips and fried them. He then topped them with cheese and jalapeno put them in the oven for a few minutes. He named them after himself using his nickname "Nacho", and called them Nacho Especiales then put them on the menu. After that the dish became a local and international delight.
What ingredients do I need for my nachos?
While the list of toppings for your dish are long all of them have common core ingredients at their heart. And you measure them with your heart so my measurements are a guideline for you so be sure to use in amounts you like.
The base ingredients are:
- Your favorite tortilla chips! You can mix and match different kinds, and ones of different colors to create visual interest on your party platter.
- Leftover over Pulled Pork from the weekend smoke-fest that went down at your house. Or you can buy some from a local restaurant or store. You could also substitute with pulled chicken, leftover brisket, or taco meat.
- Shredded Cheese - cheddar is great but you can mix and match here. Don't be shy mix some Colby Jack, Pepper Jack, Cheddar, Cotija, and Queso Fresco!
The toppings are the sky's the limit so be creative here with some or all of the below:
- Black beans, Pinto beans, Charro beans, or Baked beans
- Corn
- Jalapenos or Serrano peppers
- Sour Cream, or avacado
- Diced tomatoes, sliced green onions, chopped cilantro, or shredded lettuce
- Salsa, Salsa Verde, or Pico de Gallo
- Pickled red onions, olives, or pineapple
Cooking Instructions
Layer the chips, pulled pork, cheese, corn, and beans on a baking sheet, 9x13 baking pan, or cast iron skillet. Bake in a preheated 375-degree oven for about 10 minutes or until warm and the cheese is melted.
Remove from oven, and add the additional toppings. Serve immediately.
Additional tips for serving for a crowd
You can make a Nacho bar with all the toppings in containers for guests to pick and choose what they want. Just layer up the base on a baking sheet then let everyone grab and growl. Be sure to serve some delicious smoked pig shots too!

Pulled Pork Nachos Recipe
Ingredients
- 4 cups tortilla chips
- 2 cups pulled pork
- 1 cup cheddar cheese shredded
- 1 cup black beans drained
- 1 cup corn
- ½ cup sour cream
- ½ cup pico de gallo
- ¼ cup jalapeno sliced
Instructions
- Preheat oven to 375-degrees. Layer on a baking sheet the tortilla chips, pulled pork, cheese, beans, and corn. Bake for 10 minutes or until the cheese is melted and the dish is warm.
- Remove from oven, and add remaining toppings. Serve immediately.
